In a small saucepan, melt the butter over low heat. Keep cooking the butter for 5-8 minutes, swirling it around the saucepan occasionally. You will notice that the milk solids and the butter slowly start to separate with the solid pieces settling to the bottom. The butter will turn brown, and smell nutty.
Carefully, pour the browned butter in a large bowl. Add the garlic and stir. Then, add the brown sugar, vinegar, hot sauce, salt and pepper, and stir vigorously till the sauce emulsifies. Taste and add more salt, pepper, or brown sugar till you're happy with the flavour.
Serve immediately or store in the refrigerator for no more than 1 week.
You can use it as a dipping sauce for chicken wings, fried chicken, or momos, and as a sauce for a sandwich.
