This fried egg sandwich is the perfect snack for when you need something hearty that'll tide you over for a while.

Ingredients
2 eggs
4 slices bread
2 tablespoon oil or butter
2 green chilies, chopped
Salt and pepper, to taste
1 cup mixed vegetables, finely chopped (carrots, capsicum, onions, cucumber, cabbage, lettuce, spinach)
1 tablespoon mayonnaise
Cheese (optional)
Directions
Put your bread slices in the toaster and begin toasting lightly.
In a pan, add 1 tablespoon oil or butter and let it get hot on a medium flame. Break one egg in, season with salt and pepper. Cook on a low-medium flame till the yolks are set to the point you like. Leaving it a little runny adds to the flavour when you bite into the sandwich.
Repeat the previous step for the other egg.
In a bowl, add the chopped vegetables and mayonnaise, and mix together.
Layer the vegetable mix on one slice of toast. Place the fried egg on top of it. If using cheese, tear pieces of it and add it. Cover with the other slice of toast.
Recipe Note
If you're not fond of mayonnaise, you can use any sauce you like to bind the vegetables together. You can use thick Greek yoghurt into which you can stir in some chipotle or any combination of seasoning you like. Just remember to use a sauce or dressing or else the sandwich might feel too dry.
