Peel and slice the potatoes into rounds, around 1/2-inch thick.
On the greased baking tray, spread the potatoes out in one single layer. Brush the potatoes lightly with oil, and sprinkle with salt and pepper.
In a bowl, add 1 tablespoon oil, the lime juice, garlic cloves, and thyme. Mix together.
Place the chicken over the potatoes, sprinkle salt and pepper. Pour the olive oil-lime juice mixture over the chicken and potatoes. Bake in the oven for 30 minutes.
After 30 minutes, spoon the pan juices over the chicken and potatoes, and broil for 5 minutes till the chicken turns golden.
Serve hot, with steamed broccoli, hot buttered rice, or toasted bread.
