Ingredients
1/4 cup canola oil
4 big garlic cloves, finely chopped
2 medium onions, finely chopped
3 tablespoons red chilli flakes
1 teaspoon shrimp paste
2 tablespoons fish sauce
2-3 tablespoons brown sugar
1 teaspoon tamarind paste
1 and 1/2 tablespoons lime juice
Directions
Add the oil to a frying pan over medium-high heat, and let it get hot. Add the garlic and onion, and fry for 2-3 minutes, letting them get crispy and golden brown, but take care not to burn them.
Use a slotted spoon to remove the garlic and onions, and place in a bowl or plate lined with kitchen tissues, and let them cool. Leave the remaining oil in the frying pan.
In a food processor or mortar, add the chili, shrimp paste, fish sauce, sugar, tamarind paste, lime juice, fried garlic and onion. Make a thick paste with these ingredients, adding water by the teaspoon if and when required.
If the oil in the frying pan has cooled, let it get warm over low heat. Add the prepared paste to the oil, and let it saute for a few till it's cooked and you get an overall even consistency. Taste it to adjust the seasoning, and add more brown sugar for sweetness, or fish sauce for saltiness. If the sauce feels too thick, add more water by the teaspoon.
Recipe Note
You can substitute the canola oil with any other neutral-flavoured vegetable oil.
