A Vietnamese condiment with a fish sauce base, this condiment is extremely versatile. With both sweet and savoury notes, Nuoc Cham can be used in a whole host of dishes.
In a small bowl, add 5-6 tablespoons of warm water and add the sugar and mix till dissolved. Add the lime juice, garlic, chillies, and fish sauce. Whisk till combined.
Use immediately, or store in the refrigerator for no more than 3 days. Use Nuoc Cham as a dip, or add to stir fries, marinades for chicken or vegetable roasts, soups, or as a sauce in sandwiches.
Recipe Note
Substitute bird's eye chillies with dried red chillies, but use a little more, since bird's eye chillies are hotter than regular dried red chillies.
