Ginger-Garlic-Green Chilli Mix
Spanish Lemon Cream
Tomato Pickle Chutney
Prepare the ingredients
Finely chop the coriander and onion and set aside. Cut the lemon into wedges and remove the seeds.
Cook the spices
Heat 1 teaspoon of ghee in a non-stick pan and add the cumin seeds. Lightly sauté till they start to crackle. Add the chopped ginger-garlic-green chilli mix and sauté for another 30 seconds on medium low heat till it is golden in colour.
Cook the pork
Add the gravy to the pan followed by the pulled pork. Keep stirring on medium heat till the mixture becomes semi dry. Finish the mixture by adding chopped coriander (#1) and squeeze a few drops of lemon juice. Turn off the heat.
Prepare the phulkas
Place a non-stick pan or tawa on medium heat. Grill each phulka well by applying 1/2 teaspoon of ghee on each side till it is soft and golden in colour.
Fill the tacos
On each phulka, first spread the lemon cream and tomato pickle chutney. Then add the pork mixture in the centre. Top with some of the finely chopped onion. Try to evenly divide the pork mixture and other ingredients across the phulkas.
Garnish & serve
Garnish all the tacos with pickled cabbage. Sprinkle some grated parmesan and top with potato salli. Gently fold the edge of the tacos over the filling. Your tacos are ready!
