Ingredients

3 sweet potatoes
2 tablespoons olive oil
2 tablespoons mexican seasoning
Guacamole
Sour cream with chives
Tomato salsa

Directions

Heat the oven to 200°C. Slice the sweet potatoes into 1cm circles. Toss the circles in a the oil and Mexican seasoning, and shake well to coat thoroughly.
Roast the for 10-15 minutes until they're properly roasted. Let them cool a little, and then spoon different toppings on each. Guacamole, sour cream and chives, and tomato salsa go very well with the sweet potatoes.
