4 large tilapia fillets
2 garlic cloves, minced
3 tablespoons olive oil
2 tablespoons lime juice
3 teaspoons parsley, fresh or dried
1 teaspoon oregano, fresh or dried
Salt and pepper, to taste
1 large zucchini, sliced
2 large carrots, peeled and cut into 4-inch chunks
In a small pan, add olive oil and let it get hot on medium heat. Add garlic and saute for a few seconds, till it's fragrant. Remove the saucepan from the heat, add lime juice, parsley, oregano, salt, and pepper, and mix together.
Take a large baking tray, and line with parchment paper. Arrange fish and vegetables evenly in a single layer. Pour the garlic spice oil on the fish and vegetables, tossing a couple of times to ensure it's evenly coated. Sprinkle with additional salt and pepper, and bake for 12-15 minutes.
Divide rice evenly between 4 plates. Divide fish fillets and vegetables equally between 4 plates, and serve hot.
